Grilled Chicken Thighs with Ancho-Tequila Glaze

Grilled Chicken Thighs with Ancho-Tequila Glaze, sounds like the perfect way to BBQ chicken for any meal on any day, or even for a backyard cook out or other special occasion. The great thing is that this chicken dish uses chicken thighs which are much cheaper than chicken breasts, so it is a great way to feed a lot of people and you can skip the mystery meats of the ever famous hot dog. The chicken uses a basting sauce that is sweetened with agave, which is a healthier sweetener you can use in replacement of sugar. It comes from the famous agave plants you can find in the deserts in Mexico, they look kind of like an aloe vera plant, having the spiky leaves, filled with juices.

The chicken is grilled and brushed with the sauce that you mix up in a sauce pan before grilling. You slather on this yummy sauce multiple times while the chicken is grilling so the juices really sink in. This recipe also calls for ancho chiles and tequila, two other very Mexican edibles. Ancho chiles are the sweetest of the chiles, so they will meld well with the other flavours of this sauce. Tequila also comes from the agave plant, more specifically the blue agave plant, which grows in Los Altos, in a state of Mexico called Jalisco. And harvesting and distilling the fruit for tequila is a lengthy and intensive process. The men who harvest the plant have had the wisdom of how to handle the plant and harvest it properly, passed down from generation to generation.
